Apple Chicken Salad
GUYS. Spring is HERE. I get to a point towards the end of every season where I'm over it and ready for a change, and I was done with the cold weather around mid-February (as done as you can be when you live in Florida and it rarely gets below 60 degrees). Now, I'm just ready to add a healthy sun-kissed glow to my skin so I can start to look like the Florida girl that I am.
Warmer temps also means switching up my weekday lunches. Fresh salads, crisp veggies, sweet fruits - give it all to me. And all in one dish? Even better. This apple chicken salad is the best of all worlds: crunchy apples mixed with light ingredients over a bed of arugula (or on fresh sourdough bread for the hubby). It's just what my March needed.
Apple Chicken Salad
- 1 rotisserie chicken
- 1/2 cup plain Greek yogurt
- 1/2 cup sour cream
- 1 crisp red apple, diced
- 1 tbs lemon juice
- 1 tsp garlic powder
- 1 tsp parsley
- Black pepper to taste
- Arugula
- Fresh bread if you want to opt for the sandwich version
1. Remove the skin, take the chicken off of the bone, and shred the chicken in a large bowl.
2. Combine the chicken, yogurt, sour cream, and seasonings. Taste-test along the way to make sure the seasonings are to your taste.
3. Add in the diced apple, mixing to make sure it's evenly distributed.
4. Spoon the chicken salad over a bed of arugula or serve it on a sandwich.
