Blackberry Crumble Bars
While these might be called blackberry crumble bars, they can easily be adjusted to include any seasonal fruit of your choosing. Blueberries, raspberries, peaches - all would be delicious topped with this crumble.
Pro Tip
Crumble can be difficult to make. It takes patience but is well worth the time it takes to make sure it comes out correctly. Keep working the mixture with your hands, breaking up the pieces of butter until there are no remaining chunks. The heat of your hands will help with this process as well. I also find that having someone alongside you to add in cubes of butter while you continue to work the mixture helps too.

Ingredients
Base:
2 c. all purpose flour
1 c. sugar
1 tsp. cinnamon
2/3 c. butter, melted
1 tsp. vanilla
1 egg
Filling:
5 c. fresh blackberries
2 Tbs. all purpose flour
1/4 c. sugar
1 Tbs. lemon juice
Crumble:
1/2 c. all purpose flour
1/4 c. sugar
1/4 c. brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1 c. oats
6 - 8 Tbs. cold butter, cubed
Instructions
Preheat the oven to 350 degrees and line a 9 x 13 pan with parchment paper.
Base: In a bowl, combine the flour, sugar and cinnamon. Add in the egg, vanilla, and melted butter.
Press the mixture into the base of the pan into an even layer.
Filling: Combine all of the filling ingredients and evenly spread the mixture on top of the base.
Crumble: Into your bowl, combine the flour, sugar, brown sugar, cinnamon, salt, and oats. Slowly add in cubes of butter, working the mixture with your hands until a crumble forms.
Sprinkle the crumble over the top evenly. Bake for 45 minutes, or until the top is golden brown.
Once the crumble is cooled, remove the parchment paper from the pan. Cut evenly into squares.
