Oatmeal Peanut Butter Chocolate Chunk Cookies

When I baked these cookies up a few weeks ago, it made 36 of them. A whopping 36 cookies. While I have every confidence that I could have polished them off, I also didn't want to ruin my love of cookies forever.

I took a bunch of these cookies to work to share with my teammates and they loved them. Like came back by my desk to get more, and more, and more.

For the first time I felt like I was living a double life. My boss shared with some of our new teammates that I have a food blog and cook and bake all the time. They stared at me like I had two heads and couldn't believe this was the first time I'd brought any baked goods in for them to try.

In my defense, they have only been working with us for about a month.

While I'm glad to have more fans of my food, I also feel like the pressure is on to deliver some tasty, flavorful treats regularly now. Thankfully, these cookies deliver. They're incredibly soft and flavorful and perfectly sweet and crispy. They're some of the best cookies I've ever tasted and I'm sad all 36 of them are gone.

Oatmeal Peanut Butter Chocolate Chunk Cookies

Servings

36 cookies

Prep Time

15 minutes

Cook Time

12 minutes

Ingredients

  • 1/2 c. butter softened

  • 1 1/2 c. creamy peanut butter

  • 1 c. sugar

  • 1 1/2 c. brown sugar

  • 3 eggs

  • 1 tsp. vanilla

  • 2 tsp. baking soda

  • 2 Tbs. honey

  • 4 1/2 c. rolled oats

  • 1 c. chocolate chunks

Instructions

  1. Preheat your oven to 350 degrees.

  2. In your mixer, combine the butter and peanut butter.

  3. Add in the sugars, eggs, and vanilla and mix until creamy.

  4. Add in the baking soda and honey.

  5. Fold in oats until coated thoroughly.

  6. Mix in chocolate chunks.

  7. Spoon heaping tablespoons of the dough onto your baking sheets.

  8. Bake for 12 minutes or until the cookies are golden brown and firm.
