Paleo Blueberry Banana Bread

 

Ever have a really crazy week that you know is coming and prepare for as much as you can but it still catches you by surprise and you feel completely unprepared and extremely overwhelmed?

That was my week.

All the stress was centered around my work week. Nothing crazy, just multiple events resulting in late nights and early mornings all back to back. With very little sleep and long work days, I only managed to get one workout in this week, which never helps my stress levels.

 
 

The one good thing I did for myself heading into this week was food prep the heck out of it. Sunday afternoon was rainy (thank you, Tropical Storm Emily), so I had nothing better to do than camp out in my kitchen to prep breakfast, lunch and dinner for the week as best I could.

Earlier in the day Andy told me that if I ever wanted to just make a batch of banana bread for him to take in to work that he didn't think anyone in the office would be upset by it. Subtle. Little did he know I was already planning to bake this paleo blueberry banana bread for us for the week. I'm so glad I did because besides being delicious and flavorful and incredibly filling for my run around the office days, it was also super easy to slice up to grab and go on my busy days. Perfect crazy work week breakfast.

 
 

Paleo Blueberry Banana Bread

  • 1 1/4 cups almond flour
  • 2 1/2 tbs coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 5 tbs coconut oil, melted
  • 1/3 cup honey
  • 2 tsp vanilla extract
  • 1 ripened banana, mashed
  • 1 cup blueberries
  1. Preheat your oven to 350 degrees and grease a bread pan.
  2. In a medium bowl, combine the almond flour, coconut flour, baking soda and salt.
  3. In a separate larger bowl, combine the eggs, coconut oil, honey, vanilla, and banana.
  4. Slowly stir in the dry mixture to the wet ingredients.
  5. Fold in the blueberries.
  6. Pour the batter into the bread pan and bake for 30 - 35 minutes, or until the top is firm and browned.
